Serves 6 as a human dish, serves 2 as a doggie dish based on a 50lb/22.5kg pooch

large flat green noodles |
|

large avocado, peeled and sliced |

2 tbs |
|
fresh lime juice |
|
1/2 cup |

corn oil |
|
1/4 cup |

flour |

potato starch or cornflour |
|
2 1/4 cup |
|
milk |
|
1 cup |
|
grated Cheddar cheese |
|
6 6oz |

skinless chicken breasts |

3/4 tsp |

|
Prepare noodles according to package directions, drain, and set aside. Preheat oven to 180C (160C fan assisted oven)/350F/ gas mark 4. |
Drizzle avocado slices with lime juice and set aside. |
Heat oil in a 2-quart saucepan over low heat. Stir in flour and potato starch or cornflour over low heat until mixture bubbles. Add milk slowly, stirring constantly until mixture thickens. Add cheese and stir until it has melted. Reserve 1 cup of this sauce. Mix remainder with cooked noodles. |
Place chicken in bottom of a 9 x12 x 3-inch rectangular baking dish. Spoon noodle mixture over chicken. Place avocado slices on top and pour reserved sauce over avocados. Bake, uncovered, 35 minutes. | |

Cooking Tips |
For the human dish omit the calcium add 1 tsp salt. You can also add tabasco sauce and chilies to spice up this dish. If you are sharing this with your pooch, add the calcium to your pooch's portion when the dish has finished cooking. Alternatively, divide the mixture in half or 1/4:3/4, add the calcium to the poochie portion and the human goodies to your portion and cook in two dishes. |
