Kurobuta Pork Cooking Tips

ROASTS

As with kobe beef, low and slow does it.  For roasts heat the oven to high: 200C (180C fan assisted)/400F/gas mark 6. 

Place meat in pan with 1 - 2" water.  Place in oven and cook at high temperature for 20 minutes.  Turn oven down to 100C/225F/gas mark 1/4 and cook for 12 hours.

You will have pork that is crunchy and crispy on the outside and unbelievably juicy and tender on the inside.

At the end of 12 hours if you want the crackling crisper turn oven back up to the original temperature and cook for another 20 minutes.

CHOPS

Heat grill to high.  Sear both sides, turn heat down to medium and cook for 3 - 5 minutes each side depending upon thickness of chops.

BABY BACK RIBS, DRAFT AND TENDERLOIN

Choose your favourite recipe and cook at a lower temperature than you normally would.
