Egg & Vegetable Casserole

|
Preheat oven to 350°F. Place vegetables in a microwave-safe bowl. Cover with plastic wrap and cook on high for 3 minutes. Set aside. Or steam for 3-5 minutes and set aside. Mix eggs, cottage cheese, liver, oil and calcium in a large bowl. Pour half of the mixture in a greased 9 x 13 inch pan. Top with well-drained vegetables and shredded cheese. Pour remaining egg mixture over vegetables. |
Bake at 180C (160C fan assisted oven)/350F/gas mark4 for 45 minutes to 1 hour. Eggs should be set and the top lightly brown. Cool to room temperature and serve. |
For the human version, omit liver, oil and calcium and season with salt and pepper if desired. If these quantities are plenty for you and your pet, divide the mixture in half or 1/4:3/4, add the liver, calcium and oil to your pet's portion and season your portion and cook in two pans. | |
